Chick Pea Curry
Ingredients
- 2 medium onions
- 1 tablespoon ginger / garlic paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/4 teaspoon chili powder
- 6 tablespoons of vegetable oil
- 1/2 cup of water
- 1 can of chick peas or garbanzo beans
- 1 large potato
- fresh coriander leaves
Directions
Heat oil in a heavy saucepan. Fry the sliced onions till golden brown. Lower the heat and start adding the spices stir-fry for a few minutes. Add the diced potato and mix well, stirring for 2 minutes. Add the water and the drained can of chickpeas, cover and simmer for 7 - 10 minutes. Sprinkle over the lemon juice, and fresh coriander, serve over rice.
Aloo Chaat
Potato Salad
Ingredients
- 4 medium Potatoes
- 2 tsp. Chaat Masala
- 1 tsp. Red chili powder
- 2 Tbs. Chopped green coriander
- 1/2 cup chopped onion
- 1 tsp. (optional) chopped green chili
- 2 tsp. Lemon juice
- salt to taste
Directions
Boil potato. Cool, peel and then cut into small cubes. Mix remaining ingredients with the potato and arranging ingredients with the potato and arrange in a platter to serve. Could also deep fry potatoes in a very hot oil briefly after boiling and cutting into small cubes to give a nice crisp texture.
Keema Shahi
Ingredients
- 1lb ground lamb
- 1 large onion (chopped)
- 1 large tomato (chopped)
- 1 Tbs. Garlic Ginger Paste
- 2 tsp. Of Vegetable oil
- 1 Tbs. Of Tomato Paste or puree
- 1 tsp. Of Allspice (Garam Masala)
- 1 tsp. Of Coriander Powder
- 1 tsp. Of Cumin powder
- Salt to taste
- 1 tsp. Of Chili powder
- 1/3 cup water
- 1/4 cup Frozen peas
Directions
Sauteed Lamb and set aside. In heavy saucepan, fry onions till golden brown. Add ginger, garlic and stir-fry all the spices together with tomatoes. Stir well and add the sauteed lamb and peas. Add the water, cover, and cook until water is absorbed.
